I've been a fan of Star Wars and of various SF franchises (Trek, Gundam, Yamato, etc) in the space opera vein for a long time. It's occured to me that, after 20 years of dozens, perhaps hundreds of creators working on a particular setting, that AUs (alternate universes), separate settings and distinct sub canons are not only desirable, but necessary.
Stories need a beginning, a middle, and an end. Instead of having gigantic, sprawling messes that disappoint everyone, I feel that Disney needs to do with Star Wars what Toho is doing with Space Battle Cruiser Yamato, and what Bandai has done with their Gundam franchise - create distinct alternate settings that focus on specific settings and continuities within the property. Yamato 2199, for instance, is a distinct retelling of the Yamato story from the original Space Battleship Yamato story from 1979, but it's still identifiably Yamato. It's the same with the setting of the old Marvel Star Wars comics compared to the Zahn Star Wars Thrawn Trilogy or the Clone Wars CGI series - loosely connected by continuity, but still Star Wars. Fans who don't care for Clone Wars can dig the Marvel Comics Star Wars. Marvel Comics Star Wars needn't be tied lore-wise to Clone Wars Star Wars. Further, a creative team can take ownership and not have to worry about some "canon" they have to obey and make up their own sub-lore. "Canon" is a term that should stay in religion, and is an excuse for fans to beat other fans up.
So, let's talk about what kinds of Star Wars AUs we'd like to see - continuations of the Zahn-derived storylines, Clone Wars based stuff, Tales of the Jedi era stories, but developed independently of each other, similar to how Gundam does stuff like Gundam 00, Gundam Seed and so on. AUs would do so much to give everyone the Star Wars they want.
